SELECT CAVIAR MOLECULAR SPHERIFICATION
Caviar spherification is obtained through a reaction of a base liquid (alginate+sugar syrup+Select) in a calcic bath (calcium dihydrate and H2O), working with a droplet system using a syringe. The product obtained is then poured into a champagne flute of Prosecco Doc.
